Pumpkin Oatmeal

I came across a great site today called Green Halloween. While I don’t usually feature green entries here at Season of Shadows, the majority of my private life has naturally gone green due to my exploration into personal development and becoming more consciously aware. Green Halloween was founded by Corey Colwell-Lipson after she became a mom on an admirable mission: to provide parents and children the opportunity to find affordable kid and Earth-healthy treats and treasures. Green Halloween is working on a nation wide campaign to spread the 3 G’s: Good For People, Good For Planet and Good For Community. And I say good for you Corey and Green Halloween!
After checking out the majority of the site, I had to feature Corey’s recipe for pumpkin oatmeal. I’m a total oatmeal freak – eating up to three cups a day raw, blended into my protein drinks. I credit oatmeal for keeping my cholesterol (along with exercise) under 126. By the way, the ladies featured in the image aren’t affiliated with Green Halloween. I was searching for an image depicting a pumpkin and pumpkin themed baked goods, when I found this photo. I included it because the lady on the left is wearing a sweatshirt from one of my old high schools (Boerne High in Boerne, Texas)… small world.
Pumpkin Oatmeal
1/2 c old fashioned oats
1 c water
1/4 c pumpkin (organic canned pumpkin works great)
1 tsp pumpkin pie spice
1 tsp brown sugar
walnuts or raisins if desired
Combine ingredients in a bowl and microwave 2 – 3 minutes.
